Chef Julian Vane

Julian’s journey began in the disciplined, high-pressure

environments of three-Michelin-starred kitchens in London

and Copenhagen. It was there he mastered the technique, but

it was in the wild landscapes of the Pacific Northwest where he

found his voice.

His approach is academic yet visceral. He spends months

vetting a single supplier, seeking out those who preserve

biodiversity and honor the slow rhythm of the seasons. His

kitchen operates with the focus of a newsroom—fast-paced,

demanding, and uncompromisingly precise.
